Sweet Vanilla Frosting

This is very sweet frosting so you probably don’t need more than a tablespoon on each waffle. But you can always go wild and double the icing recipe if you wish. Yields roughly 1/3 cup, or enough for a rounded-tablespoon dollop on four waffles.

Ingredients
  

  • ¾ cup confectioner’s sugar
  • 1 tablespoon melted coconut oil
  • 2 ½ teaspoons water
  • ¼ teaspoon vanilla extract
  • dash of salt

Method
 

  1. In a small microwave-safe bowl, warm the coconut oil just until melted. This probably shouldn’t require more than 30 seconds. Add the other ingredients and mix with a fork or spatula until well blended.
  2. It may require some adjusting to get the desired thickness. If it’s too thin, stir in more confectioner’s sugar, no more than one or two teaspoons at a time. If it’s too thick, stir in more water, no more than half a teaspoon at a time.
  3. Spoon a tablespoon-sized dollop onto the center of each waffle just before serving.

Notes

The oil may separate from the mixture slightly. If you wish to prevent that, make the frosting 20 to 30 minutes before serving and chill it in the refrigerator to harden the coconut oil. This will also thicken it, and it may take effort to stir it so it’s soft enough again to serve. You might need to stir in a small amount of additional water, no more than half a teaspoon at a time.
If you prefer a thinner icing that you can drizzle over each waffle with a spoon, just add a bit more water to thin it.
