I promised my wife waffles at some point and when she brought it up I googled "vegan waffles." I never would have expected an entire website dedicated to it, and it seems you're based in my hometown! Good show.

Jason,
Thanks for the visit, and let me know how your experiments go! Your approach reminds me of a video I saw recently re: how Moby makes vegan pancakes - just kind of mixes things together without measuring them, and it works. Once you have a good feel for what you're doing you can do that with waffles, although waffle irons do take a bit more know-how than an iron skillet. Trying different grains is also a way to add varied nutrition to waffles, but that often requires other tweaks to maintain the binding. The bananas can be a bit tricky; I've had the same experience with bananas in brownies.
Your site is also very interesting; whenever I'm on the other side of the state again I'll need to check it out!

Oh I am soooo about to study this site.
I have been vegan since around 94, and a waffle maker for about 3 years now. Started out just using Aunt Jamima whole weat mix as a batter base and now I'm starting to make from scratch more often. I'm always looking at ways to toss nutrition in to the waffle and yummy maple syrup mixes. My problem is I can't really seem to follow a recipe but they usually work out for me. Tonight for example i used silk vanilla yogurt, earth balance, ground flax, soy milk and a little maple syrup for the wet in my whole wheat batter. very good. and topped with heated maple syrup and earthbalance mixed with cinnamon and pecans on top.
no measuring. ok i'm off to explore your site. oh i have one tip you may already know or it might be on your site- I usually use 1 or 2 bananas but i use an Immersion Blender to totally blend the banana into the soy milk or water. I find mushed banana to make the waffle mushy and with an uncooked texture. Yuck.
